![]() A pit were dug in the ground, then a fire was built in the pit and large rock such as limestone or basalt were added on top of the burning wood and coals. After several hours, the rock could reach over 300 degrees. Food was then cook on top of it, which is known as Hot Rock Grilling, and sometimes these hot rocks are put into water to make water boil, this is known as Hot Rock Boiling.
These rocks are placed in a specially designed oven that keeps rocks around 400 degrees, at this temperature, allows you to sears the food faster and lock all the juice and flavours within.
